Difference Between Suppliesand Purchaes

This may be a basic question and I'm just not "getting it", but what is the difference between My Supplies and My Purchases? Do I need to add every supply item that I purchase into both areas? Please no.... Is there somewhere that I can add more detailed categories? For instance, under additives can I break it down further by adding categories "Colorants, Extracts, Cosmetic Ingredients (Humectants, Emollients, etc." or no because it's geared for just soap. Thanks for any help.
